maybe you could combine your skills--i make spinach pie. i use prepared crusts (because i'm all about getting it done quickly!) for two pies, you'll need two crusts (of course!) one large bag of frozen spinach, 4-5 eggs, depending on the size of pie crust, a little onion if you like it, some garlic (i use the freeze dried roasted garlic), about a teaspoon of salt, pepper to taste, a pinch of cayenne, a splash of milk, and a large bag of shredded swiss cheese. thaw the spinach, and squeeze out the liquid. put in a large mixing bowl, and add the other ingredients. mix well, and spoon into the pie shells--bake at 350 for approximately an hour--cover the edges of the crust with foil if they start to brown too quickly--you can top it with a buttery bread crumb mixture if you like, before baking--my family just likes the cheesy spinach straight up. it's not as eggy as a quiche, and you can vary the ingredients to your own taste. (i've used a pinch of nutmeg instead of the cayenne, instead, and the youngest kid likes that kind better) i've added a few tablespoons of crumbled cooked bacon, as well. play with it--it's best right out of the oven--but it reheats in the microwave without losing any taste. (i tote it to work cold, for lunch, too)
