Somewhere on this site there is a sample of a technique from eleanor burns that explains how to help make that center seam flatter. Basically, you take 1 or 2 stiches out where the 4 seams come together and then fan the seam allowances out. wish I could help more, but you really need to see the photo. I had the same issue and the technique works great to give you a nice flat center.
