I would see the "Cadillac Ranch" near Amarillo, Tx (I believe its on I-40). Skip Palo Duro Canyon if you plan on seeing the Grand Canyon in Arizona (which is a must see).
Santa Fe, New Mexico and surrounding areas (Chimayo). Eat at the restaurant on the square (old town) in Albuquerque that has a tree growin in it.
Grand Canyon in Arizona - has to be seen to be believed.
Hoover Dam on the Arizona, Nevada border and of course,
Las Vegas - check out all the free displays and shows. Eat a shrimp cocktail at the Golden Gate Hotel & Casino (downtown on Fremont Street and watch the Fremont Light Show)
In Utah drive I-70 (very scenic) drop down a bit to Arches National Monument (make sure you have lots of gas in the vehicle cause the climb up to the park will eat it up)
Colorado - Estes Park, the USAF academy in Colorado Springs.
Kansas - the Flint Hills (I believe thats what they are called) and around KC go to the Hallmark place and watch cards being made.
Arkansas - Hot Springs and maybe pan for diamonds at the diamond mine
Missouri - Branson and area around Lake of the Ozarks. St Louis and the amazing Arch, St Louis Cathedral and the area around the University.
Illinois - tons of stuff around Chicago area, the Natural History Museum to see Sue (a huge T-Rex), the Science and Industry Museum (the Shedd Aquarium was okay but there are lots better in other places and same with Adler Planetarium)
and if you PM specific places you want to stop I will tell you if I've been there and what I saw thats worthwhile.
Be prepared for long drives in the west with not much inbetween and always, always carry water in the car.
