This is a copycat recipe. Was served at luncheon yesterday. They are out of this world.

1 c. butter (2 sticks, melted and cooled)
1 c. brown sugar
1/3 c. gran. sugar
3 lg. eggs
2 tsps. orange extract or 2 tsps. vanilla extract
2 c. flour
1 1/2 tsps. baking powder
1 1/2 tsp. ground ginger
3/4 c. craisins (dried cranberries)
3/4 c. white chocolate chips

Frosting
3 oz. cream cheese, softened
2 T. butter, softened
3 c. confectioners sugar
1 tsp. orange extract or vanilla

Topping
1/3 c. craisins, chopped
1-2 Tbl. grated orange rind
1/3 c. white chocolate chips
1/2 tsp. canola oil

Preheat oven to 350 degrees. Prepare a 10 X !5 pan by lining it with parchment paper or use non stick spray

Bars: Melt butter, cool slightly. With electric mixer, beat together butter and sugars 3-5 min. till light. Gently blend in eggs and orange extract. (Don't overbeat). Add flour, baking powder and ginger. Beat briefly. Add cranberries and chips. Stir. Spread thick batter in prepared pan. Bake 23-24 min. until light brown at edges and skewer tests clean. Don't overbake. Cool completely.

Frost.

Garnish: Use a zester to remove rind from orange, sprinkle over frosted bars. Chop Craisins coarsely. Sprinkle.

Drizzle: Mix white chocolate and oil in glass measuring cup. Microwave 1 min., stil till melted. Use a for or whisk to drizzle diagonally across the bars. Allow 1 hr. for the white chocolate to "set" before cutting. Cut in large squares then on diagonal to look like Starbuck triangles.

Frosting was very rich. I would probably only use half. Then topping. They are yummy.
