I would use the english paper piecing method, much more accurate if you are unsure of stitching with seams

Just cut out enough papers the 'finished' size of triangles, cut fabric with roughly 1/4 seam allowance, tack over papers, then overstitch two sides together, carry on adding triangles until you have the size and layoutyou want, remove papers then layer up and quilt as usual :D
