I don't see any reason why you can't add a bit of fabric to increase the width of the cuff fabric. Find something in your stash that coordinates nicely or contrasts well. I've cut my cuff fabric in the center and added the extra there so that it's even.
I did a very "manly" pillowcase for a son-in-law for Christmas out of tool fabric. Just for fun (and to tease him a bit!) I added a piece of rubber ducky fabric in the cuff. He's big and gruff sometimes, but a genuinely sweet guy.
