Potato Candy
1 cup mashed cooked potatoes
2 teaspoons vanilla extract
2 pounds confectioners' sugar
peanut butter
mix to make stiff dough. roll out between two pieces of waxed paper. Peel top paper off, spread peanut butter over potato mixture. Carefully roll up like a jelly roll. chill and slice.
you can also shape Potato mixture into balls and dip in melted chocolate
