Be creative with veggies - celery, peppers, cukes, parsley, broc., spinach leaves ...) I never did all green (can you sneak in some red cherry tomatoes or cauliflower for extra color?
For the top, cut a star shape out of cheese & roll in basil.

This is sooooo cute! I'm afraid somebody would complain that it was reallly a salad, though.....but I'll make this for my gradnsons for Christmas dinner!
