If you want to skip the binding, you put the batting on the back of the quilt (very important) and put the backing on the front of the quilt with right sides together. Stitch all four sides except about a foot - in the middle of a side, not a corner. 1/4 inch from the edges will be okay. Trim the corners and turn right side out through the opening. Press the quilt lightly and sew the opening closed by hand with hidden stitches.
Oh I've done this and it works pretty good. It certainly is faster but some of my were a little wonky but hey, they still worked!
