Half the time, I bring a huge batch of "threatened" green beans (somewhere between crunch and soft), tossed with butter-sauteed minced onions (just until edges get slightly caramelized) and "confetti" of (uncooked) finely diced orange bell pepper, red bell pepper and/or yellow bell pepper - just a little salt and pepper. I make a LOT for pot lucks and I never go home with leftovers. The other half of the time, I bring a batch of carrots drizzled with dill-and-shallot butter.
