A friend of mine does these with cake. She bakes a cake, cools it, cuts it up into small pieces and mixes in a can of icing. Then she chills it until it hardens, uses a melon baller to scoop it out and dips the balls in the chocolate. My favorite is Red Velvet with Cream Cheese icing dipped in white chocolate.
