LC is "LOW CARB".

This means most of my calories come from protein and fat. Right now, this is about 13% protein (about 2-1/2 ounces a day), 80% fats (about 7 ounces a day, mostly as nuts and supplementing with mayo as salad dressing) and the remainder (about 7%) as carbs (in the form of veggie-tray favorites (with mayo as dip!) and salads.) I've eaten as much as 2600 calories in a day and still lose weight using the above percentages.

My low carb cheesecake recipe is from a locarb forum:

2 packages 8 oz cream cheese
2/3 c granulated Splenda (I use 1/2 cup)
3 eggs
1/4 tsp. vanilla extract

Soften the cream cheese and beat all ingredients until good and smooth.
Pour into pie pan.
Bake at 325 for 50 mins.

Cool for 20 minutes.

Topping
1 cup sour cream
1 tsp vanilla
3 Table spoons granulate Splenda (I use 2 Tbsp.)

Mix and spoon on top of "crust"
Bake another 15 minutes at 325. Best served cold.
