Starching stabilizes fabric so cuts are more accurate. Piecing also can be more accurate. It also helps to stabilize the quilt top before layering, so that no puckers develop while quilting. I heavily starch the backing fabric before sandwiching, as then I don't have to worry about unwanted puckers on the back when I machine quilt.
