I pulled out the recipe and here it is.
1 1/2 cups milk scald, take off heat, add butter or margarine
1/4 pound butter or margarine
(cool to lukewarm then add to dry ingredients)
Put in large bowl:
2 cups flour
1/2 cup sugar
1 dry yeast
1/4 teaspoon salt
2 eggs well beaten
remove 2 teaspoons of eggs for topping
1 teaspoon cardamom seeds, ground
3 cups flour (enough flour so it is not sticky, but not too much, it will make it hard
2 8/9 inch pan
Add liquids to dry ingredient. Beat for 2 minutes at medium speed with electric mixer, scrapping bowl occasionally.
Add beaten egggs and cardamon seeds, beat thoroughly, then add more flour gradually and using beaters until it gets too thick for beaters. Keep adding flour until it is too stiff to beat with a wooden spoon. Put flour on table and put dough on it and knead in flour until it does not stick to hands.
Butter the bowl, put in the dough, turn over to grease itself (should be like a ball). cover with dish towel, put in a warm place and let rise 1 1/2 to 2 hours.
Testing dough, press 2 fingers in 1/2 inch and if small dent remains, it is ready.
Butter pans.
Plait and let rise 1 hour. Brush egg topping and sprinkle with sugar.
Bake at 350 degrees for 30 minutes
This is my Finnish grandmother's recipe.
