If you do cut the binding on the bias, you will be amazed at how easily it turns back over to the wrong side.
And, yes, you piece the binding strips together the same way as straight binding. There is a method to cut continuous bias, but I've never bothered with it. Cutting the strips and joining them works just fine.
And what would you pink? The actual binding? It's not like in applique where there is a wrong side.
