That's probably too much bulk, even if you offset the seams.
For the piece in the middle for the batting, I would zigzag the edges together, thus avoiding the bulk of a seam.
I do the same with regular cotton batting if I have to join pieces together to get the right size. No seam = no bulk.
And for the back piece, sew the seams with a slightly smaller stitch length and press the seam(s) open. That should reduce the bulk, and the result will a nice flat, no bumps quilt.
