If you want 1" of your binding to show, stitch 1" from the edge, or trim your quilt 3/4" from the edge and stitch 1/4" on your quilt top. When you get to the corner, stop 1" from the end, turn the quilt, fold the binding back to the new top edge, then straight back down. That should give you that sharp corner that you're looking for.

This is the same method that we normally use for bindings when we take a 1/4" seam, stop 1/4" from the end, etc. Send me a PM if I need to take some pictures tomorrow when I'm in the studio.
