How far down do you cut and do you go through the material right next to the centre stitching lines. If this is not the case, i do not know how to fold them both different ways like the other 2 sides which are immediately facing the opposite ways when joined.. Hoping i am making sense. :? I am scared that if i cut - i will make the stitching come UNDONE.

It's not "cut" use your fingers and just go opposite ways on the seam. it should come slightly apart. if you need to only take one or two stitches out. You don't need much, and don't go past your sewing line in the other direction!! I hope this helps.
