One trick that might help you evaluate -- turn your photos into grayscale (black and white) and you will be better able to tell if you have enough contrast happening.

The gray scale thing really works. Take a shot and then you'll be able to see right away what will and will not stand out. Any two that show up the same gray, delete one then photograph them again. Keep adding/subtracting until what shows up on the photo and what shows up on your table is appealing.
Then enjoy the process.
