I have Celiac disease and I have learned how to cook all over again. I have several recipes. Here is one I made up myself.
Chocolate Chip Muffins (Gluten Free)
2 1/3 C. Flour Blend
2/3 C. Sugar
2 1/2 t. Baking Pd.
1 1/2 t. xanthan gum
1 t. salt
1 t. unflavored gelatin powder
1/3 c. powdered milk
1 C. Applesauce
1/4 c canola oil
2 large eggs
1 t. vanilla
3/4 c chocolate chips
3/4 c. white chips, or butterscotch chips
Mix all dry ingredients together then add all wet ingredients. blend till moistened,
Gently stir in chips. put into greased or paper lined muffin cups. Bake 400 for 20 - 25 min.
