My son LOVES anything pumpkin. I make him pies and such year round. To save us from getting bored with the same old pumpkin pie, I alternate the pie with muffins, breads, and this recipe:

Pumpkin Dump Cake

3 eggs
3/4 c sugar
1 regular can pumpkin
1 regular can evaporated milk
double spices on back of pumpkin pie
2 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1/4 tsp nutmeg
1 dry cake mix (yellow or white work, best)
1/2 c chopped nuts (optional)
2 sticks butter, melted

Preheat oven to 350 for glass pan, 325 for metal

1. In large bowl mix eggs, sugar, pumpkin and spices. Slowly mix in milk. Pour into bottom of greased 9 x 13 x 2 pan.

2. Sprinkle dry cake mix (the whole thing) over the pie filling evenly. Sprinkle chopped nuts over that . (optional). Drizzle melted butter evenly over the top.

3. Bake 1 hour or until knife inserted in center comes out clean. Serve hot or cold with Cool Whip or Vanilla Ice Cream.
