One border comes to mind as many antique quilts only had one or no borders. Utilitarian quilting would be great on it. I do my utilitarian quilting about 5 stitches to the inch. The most important part of utility quilting is the evenness of the stitches. I also use heavier thread, in some cases I've used 3 strands of embroidery floss. Just my thought.
