Please don't hurt his feelings by telling him that they aren't the quality you prefer.
I would make him something if the prints are suitable for a man or maybe you could make a charity item like pillowcases for a local children's hospital.
Or..you could make a table runner or placemats.
Be happy that he bought you fabric, knowing your love of quilting. Every year my kids ask me what I want for Christmas. I tell them a gift certificate to the LQS is perfect, even just $10. Think I have ever received one???? NO...LOL
