I agree with quiltmaker101 on the Storm-at-Sea idea. It is stunning in just two fabrics, classic, conservative, and masculine in the chosen colors. If you can expand to more fabrics while keeping the dark green and burgundy colorway, this website has several variations of the block using simple fabric placement changes.

Log Cabin would also work well if you can use multiple fabrics in those colors. They don't HAVE to be dark and light. I've seen some stunners in black and red.
