Barbara- your quilt looks great! I like how you've described what you've done so far- I am almost to the point of putting mine together. I'm already thinking of how I'm going to quilt it. I like the idea of going next to the sawtooth. Works for me!
And, to answer your question- I always bind after quilting. Allows for movement of the fabric.
