Judges really like full bindings, when you feel of the edges you don't feel any empty space, the binding is full. I don't know what you do with all the extra fabric when you cut it wider. I like mine to be 1/4 inch on the front and 1/4 inch on the back, looks very nice.
You simply adjust your seam allowance to compensate for the wider binding. The wider the binding, the wider the seam allowance. A binding doesn't have to use 1/4" seams. At least, that's my take on it :)
