Chele, that sounds awesome, I'm going to try it this weekend.

My go to/brainless meals are:

Quesadillas, cheese, any leftover meat (or none at all - if you don't have leftovers or want a vegetarian meal), onions, peppers, shrooms (all optional). Put ingredients in a tortilla, fold it in half, and I grill mine on my Foreman grill. Top with salsa and sour cream, a bowl of raw veggies, carrots, celery, broccoli etc... and a salad dressing as dip.

Or an omelet, same idea but with eggs instead of a tortilla. Add any toppings you want/have in your fridge: shredded cheese, meat, any veggies. simple, quick and satisfying. DH even likes to add salsa to omelets.

If I have a roast in the freezer (a cheap cut), I'll throw it in the crock pot before I go to work in the morning (frozen solid) with a couple of cups of beef broth. I shake Montreal steak spice on top, and set it on low for the entire day. The meat just falls apart and is so juicy, we eat it as beef dip with buns, all we have to do is make a salad when we get home. My kids also like it if I throw some fries in the oven, but I prefer salad.

The roast usually gives us meals for a couple of days, so I'll make quesadillas the next night, and usually a shepherds pie the last night with alll the small scraps. Saves thinking about meals for at least 3 days, gives my poor overtired brain a well needed rest.
