Another cucumber salad.
Thinly slice 2 seedless or 3 regular cukes.Peeling or not is up to you. Mom left a couple thin strips of peel on,then used a fork to scrape down the sides before slicing.
Salt & let sit for 1/2 hr,rinse & pat with paper towels to dry.Slice a red onion thinly & separate the rings.Mix with cuke slices.Add 1 1/2 C cold water,1/4 C vinegar (I use rice vinegar),sugar to taste or Splenda.Stir to dissolve sugar. S&P.
Taste & adjust to your taste...a bit more vinegar or sugar? Add either by the TBL.Cover with tight lid & refrigerate.After an hr or so,stir & taste...adjust seasonings as wanted. Chill till served.These keep for at least a wk.
