I just this minute finished making this recipe for the first time and it is YUMMY! Serves 4.

1 large onion, finely chopped
2 cloves garlic, crushed or finely chopped
1/2 teaspoon cumin
1/2 teaspoon ground coriander seeds
1/2 teaspoon ground black pepper
200g red lentils
1.5litres vegetable stock
olive oil
juice and rind of 1 lemon

Heat the olive oil and saute the onion and garlic until soft.

Add the cumin, coriander, pepper and lemon juice and rid, stir and continue to cook for another 2 minutes

Add the stock and lentils. Cover and simmer for 20-25 minutes, or as long as it takes for the lentils to soften.

Depending on your taste, it shouldn't need any salt - the stock will have salt in it, and if you feel it needs any more, taste the soup and add it at the end.

Serve it as it is or blend until smooth.

If you want to make it a bit richer you could add a dollop of cream, or creme fraiche (healthier) at the end.

You can pretty much add any veg to this soup and maybe make it a chunky winter soup - carrots or potoatoes added would make this a meal in itself! YUM! I LOVE soup!
