I see no reason not to sign your name, put on a date, and maybe a Bible verse or favorite saying. I'm not worried about being "stalked" or "harassed" by a veteran or someone in a nursing home. And I'm not looking for recognition or future customers. (Just a few things another poster felt was a concern to her.) But there is nothing wrong (in my own opinion) with putting this info on a quilt even when for charity.

An artist painting a picture to donate would still put their signature on the canvas. I think of all the antique quilts we have today that have no signature and what a loss that is. I don't think those ladies thought their quilts would ever be so valued or sought after as they are today and maybe ours never will be, but should they survive into the next century, I think it would be for posterity to have this info on the quilt, if for no other reason. :-D

Ultimately, it's a personal choice with no right or wrong answer. Just do what feels right and you can't go wrong. :D
