Yes you can freeze cheese. Wrap in in plastic wrap, then place in a paperbag. To thaw take out of paperbag & place in refrigerator. Let it thaw in refrigerator for 24-48 hours before using.
I freeze American sliced cheese all the time. I buy 3-5 pound pre-sliced blocks, divide it up & do as above.
