We grind our own sausage - my husband buys pork on sale and grinds it - less fat and better/can add flavor. A freezer is definitely the answer to help economy - buy it, immediately divide it into portions when you get home and throw it in the freezer, being careful to date it and mark what it is. It is amazing how freezing can turn something from looking obvious as to the content - to what is it? :-)
