One good thing would be to get a glycemic index of vegetables and fruits. Vegetables vary quite a bit in sugar content. Carrots and sweet potatoes are high. I use pumpkin as a substitute for sweet potatoes to make a casserole. It is a job to cook for a diabetic but well worth the effort.
