My husband was in the diabetic range and with eating low-carb, he is now back in the "normal" range (not even prediabetic)! The best Low-Carb cookbook I have found is "500 Low-Carb Recipies" by Dana Carpender. She has written a few books, including a Low-Carb one for the crockpot. Start there, and have fun learning a whole new way to cook!
