The first thing my daughter made (7) was a doll quilt, she has made a few, and now wants to make a purse or tote bage. My eldest (12) first project was a baby blanket. I think starting something small is best, they need to have that sense of accomplishment, best way to do that is to have something small that can get done quickly. Pillowcases as already mentioned are fast and easy.
