Just like a regular sewing machine, you can learn to regulate the speed by the amount of pressure you put on the foot pedal.

Oddly enough, when I FMQ, I can still get perfect stitches on both sides by moving my fabric slower than the speed I am going. Go figure. Can't do that on my regular sewing machine, I must be going at an equal pace.
