We also add a little vanilla and salt to the potato and powdered sugar. I've found it's easier to work with if you sprinkle powdered sugar on a pastry sheet or waxed paper that's held down w/a little water, then roll out the mixture on that. Quiltermo is right, it only takes a small potato to use a pound or more of powdered sugar. YUMMY!!!
