I wouldn't SITD the hexes personally - the beauty of these is the all over design NOT the individual blocks so you don't want to emphasise them. I generally do an all over FMQ design, just a meander is fine, or swirls, or something on the theme of the fabric. (For eg on my Turning Over A New Leaf one, I did FMQ leaves.) Then I SITD round the centre part and quilt the border with feathers, leaves, vines, etc etc again trying to enhance the theme of the quilt. :D :-D
