I think you are confusing sardines and anchovies. Anchovies are the salty ones that lose that excess saltiness when combined with other foods and cooked.
Sardines are much bigger than anchovies, come in a larger size tin, smell just like cat food when opened and are not salted in the canning process like anchovies.
