Probably because it takes us back to when we were kids and it was the only veggies our folks could afford at the time, but it left a good memory and taste in our mouths. Sort of like Spam. I wouldn't want to eat it every day, but it awakens the salivary glands to a good memory once in a while (my husband and I were as poor as church mice when we were married and ate a lot of Macaroni and cheese and Spam! - That is a good memory!) I still make it once in a while. Edie
