Thanks for the recipe, I tried it and they are yummy and very easy!! I baked them a bit longer for a crispier top. Would make them the size suggested, small teaspoonful as they are very sweet. I made some way too big!! Brought them to school to share and everyone loved them. The teacher is gluten intolerant and thought these were terrific. Only caution is---coconut if eaten in quantity can cause constipation. Actually a good thing if you have the runs.
