We are picking up a side of beef this weekend so I am trying to use up everything left in the freezer. A little cold snap and it put me in the mood to make an awesome Brunswick Stew for dinner. Simmered it all day. I just kind of put it together so sorry I don't have exact measurements

I used Stew Beef, Pork and Chicken. Cut it all into small cubes about 2-3 lbs of meat.
Olive Oil
1 Onion chopped
3-4 stalks of celery chopped
1 32 oz container of broth ( whatever you have, beef, chicken or vegetable)

Potatoes cubed
Frozen Limas
Frozen Corn
1 cup smoked BBQ Sauce
Hot Sauce
3 cans diced tomatoes
1 whole Green Bell Pepper
Salt/Pepper to taste

Saute Onion and Celery until tender.
Add Meat and Brown
Put everything into a stock pot or slow cooker and simmer all day. Add hot sauce to taste.
The Bell pepper goes in whole then just before serving you can discard or chop it up and add it to stew.

Serve with hot cornbread.
