Listen to your intention of why you want to make her a quilt. Your intention is one of gratitude and love for what she does for your MIL, and, in turn, making it easier for the rest of the family.
Start something new and special for her. You can use this frustrating project for some other time and use. It sounds like she deserves your talents with that special, non-aggravating project just for her.
