You might look at the Suzanne McNeill-youtube video as well. It is somewhat related. http://www.youtube.com/watch?v=sgAZ3_xdkGw. You should be able to vary the height of the folded piece to make the center square on point larger or smaller if desired for a different look.

On the Ricky Timms video (The Quilt Show), he made his squares 3" & then his rectangle 5.5" (so center piece folded in half would be 2-3/4" ) leaving the 1/4" seam allowance at the tip. If you wanted to make your geese floating, you could cut your rectangle @ 5" (folding would leave 2-1/2" ). For beginners or those who just want to make faster time, your points will still be there, just not intersecting the base of the next triangle.
