I rarely make a new recipe as written. Just reading it I can usually figure out what I'd like more or less of to suit our tastes. For instance, lots of recipes call for just browned chop meat and then whatever. I KNOW to have a base of what we like to add onion and garlic.

Things like that. (Oh, and I always season each "layer")
