I thought I would add a few of my favorite recipies now and then. Just a reminder that I am a scratch cook and don't use measurements much.

This is a recipe for Panuchos that I discovered when I was very young and spent 6 months with my cousins in Merida yucatan.

Refried beans, tortillas, chaddar cheese, a salad of tomatoes chopped fine, romaine lettuce, cilantro and sweet onion, oil and venigar dressing (made scratch)roast beef, chicken, turkey or pork.

I make my tortillas with the Masa Harina that you can now purchase in the grocery. I refry the red kidney beans that I have cooked from scratch. I shread my meat.

I make a slash in the tortilla and lift the thin layer up. Into that I smear some of the refried beans. I then saute that stuffed tortilla in some olive oil, turning it over on each side. I then put the shredded meat on top, sprinkle the cheese and top it with the salad. Hold in two hand and enjoy....
