I did the same - got myself all geared up, then months passed. The first cut is the hardest, and it gets easier every time after that! I'd suggest a rail fence - simple strips, always looks fabulous. I used Old Red Barn Co's tutorials as part of a quiltalong, Dana's instructions are very clean but you'll have to fish through her posts to get at all the steps.
