The less expensive is made from cardboard; no wonder it says not to use with rotary cutting! The others are acrylic. To answer your question, then it is the quality of the template.
Have you tried paper-piecing? McCalls.com/quilting has a free pattern than you can download. This is my choice when making a DWR. All of the templates are included.
