Sometimes I have this too - then I read the Quilting Board, and get a little incentive, then dig out a few UFS's and just hang them on the design wall - knowing eventually inspiration will come to finish somthing off. If you'r worried about wasting fabric, check out the disappearing 9 patch images, they would probably work great for you, and to me, all look great!
