I've seen them done with flannel for the backing. Looked like large squares cut out of men's shirts.
No kidding, you won't need batting or you'll never be able to lift it and small children might get smothered :D
I am wondering if the jersey isn't going to sag, and when you use interfacing that's going to add another layer.
